Esquema de horário de funcionamento MongoDB

Esta é uma resposta revisada com base em seus requisitos. É claro que não há nenhum santo graal para esquemas, mas gostaria de motivar minha resposta antes da revisão (manter uma estrutura plana é fácil de consultar e manter) com alguns dados de amostra + consultas com base em sua lista de requisitos. Reitero, não estou dizendo que esta é a melhor solução, mas é uma solução que é simples de consultar e fácil de manter (imho).

O código é um pouco rápido e sujo, desculpe. Os dados:

É certo que a desvantagem da minha solução proposta é que ela não captura todos os requisitos em um consulta.
